J. Paul’s Experience

J.Paul's Georgetown

J. Paul’s A Dining Saloon, is Washington’s quintessential turn of the century American Dining Saloon. The original, located in the heart of Georgetown, sits in a historical building over 100 years old and has now been one of D.C.’s most popular watering holes for the last 25 years.

Some two decades ago, Baltimore’s waterfront underwent a renaissance with the creation of Harborplace, which evokes a century and more of history and urban lore. J. Paul’s was a classic addition to that cityscape. Opened in 1997, J. Paul’s in the Baltimore Harbor brings the same “prohibition era” charm of the original location to the waterfront.

Locals and tourists alike embrace J. Paul’s in the Harbor, well known for its outside bar on the waterfront and the infamous Crab Room. J. Paul’s adds a flavor of true American style cuisine, personal service and unfounded ambiance to one of Baltimore’s most enjoyed locales.

J. Paul’s recently celebrated its 25th Anniversary in 2008, and we invite you to continue the celebration by submitting your memories and creating more at either of our locations! J. Paul’s Memories

J. Paul's Amber Ale

Our award winning J. Paul’s 1889 Amber Ale is a unique blend of five different malted barleys from the prime growing areas in America, five premium hops from both sides of the Atlantic, crystal clear Loudon County spring water and a distinctive ale yeast that has been passed down through many generations.

J. Paul’s 1889 Amber Ale is a traditional style ale with a deep golden glow, rich malt flavor and sharp, flowery hops. We use time honored hand-crafting methods that date back centuries. J. Paul’s Amber Ale is a testament to the brewer’s art, and will surely satisfy the palate of even the most discriminating drinker.

Dante Fowlkes

Executive Chef

Dante Fowlkes has become almost a legend at Capital Restaurant Concepts. Attending Morgan State University and then graduating with an engineering degree from the Community College of Baltimore in 1990, Dante began his Capital Restaurant Concepts career.

He started as a line cook at Paolo’s Ristorante in Baltimore’s scenic Inner Harbor. After nine years of hard work, dedication – and constant pressure from C.R.C. Executives – he finally moved into a management position, becoming a Sous Chef at J. Paul’s – An American Dining Saloon in Baltimore. He added to his culinary knowledge under the direction of Chef Claus Neilsen. Dante’s incredible work ethic, strong leadership skills and an ability to quietly, but convincingly motivate staff members, both in the back and front of house, gained Chef Fowlkes the “Sous Chef of the Year 1999” award.

A few short months later, those same qualities earned him the promotion to Executive Chef. In late summer 2000, Dante took over the reigns of the kitchen back at Paolo’s in the Inner Harbor.

In early 2002, Dante took over the kitchen back at J. Paul’s where he continued to distinguish himself as a strong leader. Chef Fowlkes maintains a poise and positive demeanor even in the busiest, most challenging situations – which can be many during the spring/summer baseball and tourist season in Baltimore.

In December 2005, Chef Fowlkes took on the added responsibility of overseeing the kitchen at J. Paul's sister restaurant next door, Paolo's Ristorante. From there, he manned the helm at Georgia Brown's. Now, we have the pleasure of having him home at J. Paul's Harborplace.
