J. Paul’s A Dining Saloon, is Washington’s quintessential turn of the century American Dining Saloon. The original, located in the heart of Georgetown, sits in a historical building over 100 years old and has now been one of D.C.’s most popular watering holes for the last 25 years.

The J. Paul’s bar in Georgetown boasts a 100 year old mahogany shotgun bar built by the Brunswick Balke Coolander Company. Previously housed in a grand saloon in the Chicago stockyards, many will swear over their scotch that Al Capone himself bellied up to that very bar. Antique brass elevator doors from New York’s Waldorf Astoria frame the back dining room and add to the turn-of-the century charm.

Located a few short blocks from the Potomac River, the original J. Paul’s has become an institution to those from every generation and all walks of life. Every day, politicians, journalists, artists, business people and Washington personalities share tables with students, tourists and ex-Pats in the nation’s capital.

There are many places to dine in the Washington area. There are only a few, however, that combine excellent food, personal service, and a stimulating atmosphere in an historic setting. J. Paul’s is one of them.

J. Paul's Amber Ale

Our award winning J. Paul’s 1889 Amber Ale is a unique blend of five different malted barleys from the prime growing areas in America, five premium hops from both sides of the Atlantic, crystal clear Loudon County spring water and a distinctive ale yeast that has been passed down through many generations.

J. Paul’s 1889 Amber Ale is a traditional style ale with a deep golden glow, rich malt flavor and sharp, flowery hops. We use time honored hand-crafting methods that date back centuries. J. Chef Bill McPartland has come full circle in his CRC tenure over the last two years. Beginning in 2005, Chef McPartland joined the CRC family as a Sous Chef at J. Paul's in Baltimore's inner Harbor. From there, he was off to make the rounds in the kitchens of not one, but three J.Paul's locations! We are proud to welcome him back to J.Paul's Georgetown, leading the kitchen as Executive Chef.

Hailing from Pennsylvania, Chef McPartland has a long history in the kitchen. He cut his chops at Steak and Ale in Bethlehem while learning the ins and outs of standards, costs and inventory management. Shortly thereafter, he rose to prominence at Spats Cafe and Speakeasy where created nightly feature dishes as well as savory stocks and sauces.

Finally, before joining the CRC family, Chef McPartland acted as Crew Leader at The Corner Room in State College, PA. Here he not only organized training and scheduling, but also used his culinary talents with the creation of specials and soups.

Since he has been with CRC, his talents have fully blossomed in the fields of management and culinary execution and development. Just step in to J.Paul's Georgetown for your next meal, and let Chef McPartland wow you!
